Now you keto and low carb enthusiasts are saying to yourselves potatoes have lots of carbs and it addition to that the original recipe used wheat flour and butter as a thickener. Not to worry cauliflower is used instead of potatoes and cream cheese is used instead of flour.
What Maria ended up with was a creamy soup with a ton more flavor. And only 3.4 net carbs per bowl.
3 1/2 cups chopped cauliflower
1/3 cup diced celery
1/3 cup finely chopped onion
3/4 cup diced cooked ham
3 1/4 cups chicken broth
1/2 tsp Celtic sea salt, or to taste
1 tsp fresh ground black pepper
5 TBS cream cheese
Garnish with capers
