Ingredients for the chips
4 yellow squash, cut into rounds1/4 c. olive oilKosher saltFreshly ground black pepperPinch red pepper flakes1 c. panko1 c. shredded Parmesan2 tbsp. Freshly chopped parsley1/2 tsp. garlic powder
I substitute ground flax seed for the panko (a type of bread crumb ) to make the crunchy topping low carb.
Ingredients for the dip
1 c. sour cream1 tbsp. lemon juice1 tbsp. freshly chopped parsleyKosher saltFreshly ground black pepper
